Whole hibiscus flowers are used around the world for a variety of purposes – such as culinary, medicinal and cosmetic. When referring to whole hibiscus, they are either dried or fresh unbroken calyces (the structure surrounding the flower itself), as its the calyx that is typically harvested and used.
Characteristics:

Recipe Idea – Hibiscus Iced Tea (Agua de Jamaica):
Here’s a classic and refreshing recipe for Hibiscus Iced Tea, made using whole dried hibiscus flowers.
Ingredients:
- 1 cup of dried whole hibiscus flowers
- 4 cups of water (for boiling)
- 4 further cups of cold water (for dilution)
- 1/2 to 3/4 cup of sugar (adjust to taste)
- Optional: slices of lime, a few mint leaves or a cinnamon stick
Instructions:
- 1. Rinse the flowers – Quickly rinse the dried hibiscus flowers in cold water to remove any dust and debris
- 2. Boil the tea – In a medium saucepan, bring 4 cups of water to boil. Add the rinsed hibiscus flowers and turn off the heat. Leave to steep for 15-20 minutes.
- 3. Strain – Strain out the flowers using a fine mesh strainer.
- 4. Sweeten – While still warm, stir in sugar until it dissolves. Adjust sweetness to your preference.
- 5. Chill – Add the remaining 4 cups of cold water to dilute. Leave it to cool in the fridge for about an hour.
- 6. Serve – Serve over ice with a slice of lime, or a few mint leaves.
