Made by Sosa, Proespuma Cold is a powdered aerating and stabilizing agent, designed to produce cold foams (espumas) from liquids or semi-liquids – no heating required. It’s mostly used in high-end cooking to add light foams to cocktails, sauces, soups and desserts – and due to its neutral flavour, it doesn’t noticeably change the taste of the base liquid.
Ingredients & Properties:
Proespuma Cold contains: dehydrated glucose (glucose syrup), dextrose, palm-oil-derived vegetable fats, emulsifiers, thickeners/stabilisers (notable sodium alginate), along with milk protein and sugar.
Due to this mix of ingredients:
- It works by both emulsifying (mixing fat and liquid) and stabilising the foam, to produce a foam that holds texture.
- It’s ‘thermo-irreversible’, so once activated in cold, it doesn’t need any heating and won’t revert to its original form.
- It is compatible with many liquids, including sweet, savoury and acidic.
How to use:
- Recommended dose: 20-100g per 1 kg of liquid or semi-liquid base
- Process: Mix the powder cold into your liquid with strong agitation until fully dissolved
- For best effect: Use a siphon (cream-gun) charged with N2O to create the foam
- Once siphoned/charged, the foam will form, stay airy/light and remain stable even when refrigerated
Recipe Idea – Strawberry Cold Foam:
A light, fruity, stable foam you can spoon onto desserts or drinks – no siphon needed.
A hand blender can be used for this recipe – makes 6 portions.
Ingredients:
- 200g fresh strawberries (or 200g of strawberry puree)
- 50g water
- 15-20g sugar (adjust to sweetness of fruit)
- 10g lemon juice
- 10g Sosa Proespuma Cold
Method:
- 1. Blend the fruit:
- Puree the strawberries, water, sugar and lemon juice until completely smooth
- 2. Add Proespuma Cold:
- Sprinkle the 10g of Proespuma Cold into the mix
- 3. Emulsify thoroughly:
- Use a hand blender for 30-45 seconds until fully incorporated
- 4. Rest:
- Let the mixture sit for 5 minutes so the stabilisers hydrate
- 5. Create the foam:
- Place your hand blender so the blade is just below the surface of the liquid, then blend
- You will see a light foam build quickly on top
- Keep blending until you have as much foam as you need
- 6. Spoon and serve:
- Lift the foam gently with a spoon and place it onto your dessert, drink, or plate
Serving Ideas:
- On top of Eton Mess or Pavlova
- With pancakes or waffles
- On a gin & tonic or lemonade
- As a garnish for vanilla ice cream
