A well-known and classic American Spice blend, Old Bay Seasoning has a bold and zesty flavour that has remained a closely guarded secret – though it is known to contain at least 18 herbs and spices. Originating in the Chesapeake Bay area, it has been a staple in both home and restaurant kitchens since the late 1930s, and pairs perfectly with seafood dishes.
Due to its popularity, Old Bay has become synonymous with Maryland and the greater Chesapeake Bay region, where it is now seen as a symbol of pride – like Tabasco in Louisiana or BBQ rubs in Texas. The brand itself has also expanded to include other products, such as Old Bay Hot Sauce, Old Bay Goldfish Crackers and Old Bay Cocktail Sauce. You can even buy branded merchandise, like limited edition clothing.
Various Uses:
Though originally designed to be used with seafood, Old Bay is an incredibly versatile seasoning and is now used far more widely:
- With Seafood: Crabs, shrimp boils, fish fillets, lobster tails
- On Snacks: French fries, popcorn, roasted nuts, corn on the cob
- In Drinks & Condiments: Around the rim of a Bloody Mary glass; stirred into dips or mayonnaise
- For Unexpected Ideas: Deviled eggs, chicken wings, mac & cheese
Recipe Idea – Old Bay Shrimp Boil:
Ingredients
- 1 lb large shrimp, shell-on or peeled & deveined
- 2 tbsp. of Old Bay Seasoning
- 2–3 small red potatoes, halved or quartered
- 2 ears of corn, cut into halves or thirds
- 1 smoked sausage (like kielbasa), sliced
- 1 tbsp. of butter (optional)
- 1 lemon, cut into wedges
Instructions
- 1. Boil the potatoes: Fill a large pot with water and bring to the boil. Add potatoes and cook for around 10 minutes.
- 2. Add Corn and Sausage: Add the corn and sausage to the pot and cook for another 7 minutes, until the potatoes are fork-tender.
- 3. Add Shrimp and Old Bay: Stir in the shrimp and Old Bay seasoning, then boil for 2-3 minutes (or until shrimp are pink and opaque).
- 4. Drain and Serve: Drain the pot and toss everything with the butter (if using). Serve on a big platter and squeeze the fresh lemon juice over the top for brightness.
