Mae Ploy Nam Prik Paste is a popular Thai chilli paste known for its rich, smoky and slightly sweet flavour – likely due to the variety of roasted ingredients such as dried chilli peppers, garlic, shallots, shrimp paste and sugar.

Recipe Idea – Thai Nam Prik Stir-Fry:
Serves: 2
Time: 20 minutes
Ingredients:
- 1-2 tbsp of Vegetable or Peanut Oil
- 2 cloves of garlic, minced
- 1-2 tbsp of Mae Ploy Nam Prik Paste
- 200g of protein (shrimp, chicken, tofu or mushrooms)
- 1/2 medium onion, sliced
- 1/2 medium bell pepper, sliced
- Handful of green beans, trimmed
- 1 tbsp of Fish Sauce
- 1/2 tsp of Sugar
- 2 tbsp of water or stock
- Handful of Thai basil (optional)
- Cooked jasmine rice (to serve)
Instructions:
- 1. Prep Your Ingredients:
- Have everything ready – this dish cooks fast
- Slice your protein and vegetables into bite-sized pieces
- 2. Sauté Garlic:
- Heat the oil in a wok or skillet over medium-high heat
- Add minced garlic and stir-fry for about 30 seconds, until fragrant
- 3. Add Protein:
- Add your protein to the wok
- Stir-fry until almost cooked through (3-4 minutes)
- 4. Add Veggies:
- Add onion, bell pepper, green beans, or any other vegetables
- Stir-fry for 2-3 minutes until just tender
- 5. Add Nam Prik Paste & Seasonings:
- Add the Mae Ploy Paste, fish sauce, sugar and water/stock to wok
- Stir everything together until the sauce coats the ingredients and everything is cooked through
- 6. Add Basil (Optional):
- Turn off the heat
- Stir in the fresh bail for aroma and flavour
- 7. Serve:
- Spoon over steamed jasmine rice
- Top with a fried egg if looking for something extra
