Produced by the Daesang Corporation – a major South Korean food company – Daesang Corn Syrup is a popular sweetener, made primarily from corn-starch. It has a thick, syrupy texture which is similar to glucose syrup or light corn syrup usually used in Western cooking, with a flavour that is mildly sweet – not as rich or caramelized as honey and brown rice syrup.
Uses in Cooking:
- Common in Korean cooking, such as:
- Braised dishes to add sweetness and glossiness
- Marinades and sauces to balance salty and spicy flavours
- Korean snacks and sweets
- It is also used as a sugar substitute to add shine and thickness
Recipe Idea – Korean Sweet Soy-Glazed Potatoes:
Ingredients:
- 2 medium potatoes
- 1 tbsp neutral oil (vegetable or canola)
- 1.5 tbsp soy sauce
- 1 tbsp Daesang Corn Syrup
- 1 tsp sugar (optional, adjust to taste)
- 2 tbsp water
- 1 tsp sesame oil
- 1 tsp roasted sesame seeds
- Chopped scallions or chilli for garnish (optional)
Instructions:
- 1. Prepare potatoes:
- Peel and cut potatoes into 1-inch cubes
- Rinse them in cold water to remove excess starch, then drain well
- 2. Par-cook (optional but helps):
- Boil the potato cubes in salted water for 5-6 minutes until just tender
- Drain and pat dry
- 3. Pan-fry:
- Heat 1 tbsp oil in a non-stick pan over medium heat
- Add potatoes and fry until they’re slightly golden on all sides (5-7 minutes)
- 4. Glaze time:
- Lower heat. Add soy sauce, corn syrup, sugar and water
- Stir gently to coat all potatoes
- Simmer until the liquid thickens into a glossy glaze and potatoes are full cooked (around 5-7 minutes)
- Stir occasionally to prevent sticking
- 5. Finish:
- Turn off the heat
- Drizzle with sesame oil
- Sprinkle sesame seeds on top and garnish with scallions or chilli (optional)
