A fragrant and versatile spice, Baharat is a blend widely used in Middle Eastern, North African and Eastern Mediterranean cuisine. The word ‘Baharat’ is Arabic, and simply means ‘spices’ – the exact mix can vary by region or household, but normally has a combination of warm and aromatic spices. It is somewhat similar in complexity to Garam Masala or Ras El Hanout, though each spice mix is distinct in its flavour.
Typical Ingredients in Baharat:
- Black pepper
- Coriander
- Cumin
- Paprika
- Cardamom
- Cloves
- Cinnamon
- Nutmeg
Culinary Uses:
Baharat is a very versatile mix and can be used in many ways:
- Meat rub for lamb, beef or chicken
- As a seasoning for rice, stews or soups
- Sprinkled over roasted vegetables
- Mixed with Olive Oil as a marinade
Recipe Idea – Baharat Chicken with Roasted Veg:
This recipe is a quick and easy idea – serves 4 people and only takes an hour total (prep and cook time).
Ingredients:
For the chicken:
- 4 boneless, skinless chicken thighs or breasts
- 2 tbsp of olive oil
- 1 tbsp of Baharat Spice
- 2 cloves of garlic, minced
- Juice of half a lemon
- Salt and pepper to taste
For the Vegetables:
- 2 carrots, peeled and chopped
- 1 red onion, cut into wedges
- 1 zucchini, chopped
- 1 red bell pepper, chopped
- 1 tbsp of olive oil
- 1 tsp of Baharat Spice
Instructions:
- 1. Marinate the Chicken –
- In a bowl, combine the chicken with the olive oil, Baharat spice, garlic, lemon juice, salt and pepper.
- Mix well to coat and leave in the fridge to marinate (or up to 4 hours in the fridge).
- Roast the Vegetables –
- Preheat oven up to 400*F (200*C).
- Toss chopped vegetables with olive oil, Baharat, salt and pepper on a baking sheet/tray.
- Spread in a single layer and roast for 25-30 minutes, stirring halfway through, until tender and slightly charred.
- Cook the Chicken –
- While the vegetables cook, heat a skillet or pan on a medium-high heat.
- Cook chicken 5-7 minutes per side, until golden and cooked through.
- Let rest for a few minutes, then slice if preferred.
- Serve –
- Plate the roasted vegetables and top with the chicken.
- Garnish with herbs and serve with condiments of your choice.
